Tomato sauce

MAKE YOUR OWN classic TOMATO SAUCE. IT’S MUCH healthier THAN PREMADE SAUCE AND YOU CAN TASTE IT! YOU CAN spice up THE SAUCE AS MUCH AS YOU WANT. IT’S DELICIOUS OVER PASTA WITH A BIT OF GOAT CHEESE AND basil, AND MEAT EATERS CAN ADD ground beef OR chicken AS WELL.PREPARATION:  70 MINUTES
INGREDIENTS:
… 3 1 / 3 POUNDS (1 1 ⁄ 2 KG) RIPE ROMA
TOMATOES
… 1 ONION
… 3 CLOVES GARLIC
… 1 TABLESPOON EXTRA VIRGIN
OLIVE OIL
… 1 TEASPOON OREGANO
… 1 TEASPOON YELLOW SAMBAL
(OPTIONAL, PAGE 142)
… SEA SALT AND BLACK PEPPER,
TO TASTE
… A FEW BASIL LEAVES, FINELY
CHOPPED (OPTIONAL)

DIRECTIONS:
Chop the tomatoes, onion, and garlic into small pieces. Add the olive oil to
a medium-size pan and sauté the onion for 2 minutes over medium-high
heat. Then add the garlic, oregano, tomatoes, and sambal. Let the sauce
simmer for about 30 minutes. Stir often using a wooden spoon to prevent
the sauce from sticking. Once the sauce has thickened up, press it through
a sieve or vegetable mill. Return the strained sauce to the pan and simmer
over low heat for another 30 minutes. Season with salt and pepper to taste,
and sprinkle with finely chopped basil.
YIELD: 4 SERVINGS
